Sammie's Bar-B-Q opened in 1946 — a drive-in with carhops, known for ribs, beef sandwiches, and a sauce founder Sammie Norwood said would 'make us millions.' He'd tasted it overseas during the war and mailed the recipe home. That same thin, old-style sauce is still made from his original recipe today.
A mile and a half down Belknap, Sam Gibbins Sr. ran the Smoke Pit from 1961. When the Smoke Pit's building was set for demolition, Sam Sr. bought Sammie's, remodeled it, and reopened in 2018 — bringing the Smoke Pit's recipes with him. The potato salad, the table sauce, and the Friday double-cut pork chop all came from down the road.
Today his son, Sam Gibbins Jr., runs the pit. Two rotisseries, hickory wood, same as it's always been. Two Fort Worth institutions, smoking under one roof.
